Made these tacos tonight. Delicious and guilt-free!
Mahi Mahi (grilled)
Corn and Black beans (heated on stove together)
Lettuce
Tomato
Corn tortillas, small (not white flour)
NO rice
NO cheese
Did a teeeny bit of sour cream (my weakness!)

I've got an awesome low fat nacho recipe that i feed to my children and it's all low fat and healthy as well as yummy!
I'm a Canadian living in Oz, so if the ingredients sound odd, I'll try to accomodate the lingo:
Serves 4-6 (I eat like a sparrow, so it stretches out longer in my house)
Ingredients:
1 pkt corn mountain bread (chopped into little squares or place in texas size muffin tins)
Fresh diced tomatoes
Fresh diced red onion
Sliced black spanish olives
500G chicken mince (cook in a pan sprayed with cooking oil and then as its cooked add Old El Paso taco seasoning with a bit of water)
Tin of bell peppers (if available in NA)
X lite sour cream and x lite cheese (or even fat free philly, melted)
Avocado
Turn oven on to 200'C Fan Forced and toast flat bread til just crispy but not brown (takes only a cple mins)
Top with shredded cheese and melt in microwave for 20 seconds per plate)
Then top with rest of ingredients and serve!
