Recipe: Red pepper & Mozzarella melts (for 2)

I made this yesterday - filling and tasty!

2 big red peppers
100g low fat mozzarella
100g dry cous cous
150g cherry tomatoes
50g tinned sweetcorn
1 tbsp red pesto

Preheat oven to 200°C/400°F
Halve the peppers, scoop out seeds and membranes and put in a baking tray.
Add about 250 ml boiling water to couscous and let it stand for 5 minutes.
Meanwhile halve tomatoes and mix with drained sweetcorn, pesto and cubed mozzarella.
Mix in cous-cous and season as required.
Bake for 40 minutes or so.

Serve with as much salad as you wish (not included in the calorie count)

    this looks amazing!! big downer...my husband doesnt like peppers...BUT I have a girls weekend coming up and these will be coming along with me! thanks for sharing!!!
