Ideas for big dinner

I have an Aunt and Uncle who also just started to get healthier this year and started on their weight loss journey. They have been very supportive of my this week with my surgery so I want to have them over for dinner this weekend. In the past when they would come over we would just order pizza. I want to actually cook this time and make it something good for you. It will be for 4 adults and 5 teenage boys. Any ideas for a meal plan? I have beef roasts, lots of hamburger and chicken on hand here for the meats I can use.

  • you can do a baked ziti with wheat pasta, turkey meat, regular sauce( for flavor) and low fat shredded mozzarella cheese...it's pretty good and feeds a lot of people.
  • Chicken tacos: put a pound or two of bonless skinless chicken breast in crock pot with 12oz of low sodium chicken stock, one sliced onion, one sliced bell pepper, one can of green chiles and 1-2 packets (or homemade) taco (or fajita) seasoning. U can also use a light beer instead of the chicken stock and it makes it even better. Not too sure on the cals when using a beer since most of it stays in the pot, not in the chicken. Bake your corn taco shells. Go easy on the cheese and use a light sr cream. Load it up with lettuce, jalapenos, tomatoes etc. This is a favorite in our house! You can also use the beef roast too, but I would recommend the beer for that one. But, that would also increase your calories and fat. Have fun with it!

    8 oz. lasagna noodles (wheat pasta)
    1 lb. low fat cottage cheese
    1 egg
    3 tbsp. grated Romano cheese
    1 tsp. salt
    1/4 tsp. pepper
    1 tsp. oregano, crushed
    1 tbsp. parsley, minced
    1 1/2 c. tomato sauce (from 2 (8 oz.) cans)
    1 tbsp. seasoned bread crumbs
    1 oz. Kosher skim milk Mozzarella

    Cook noodles in boiling, salted water 20 minutes. Drain, rinse well. Combine cottage cheese with egg, Romano cheese, salt, pepper, oregano and parsley. In a 9 x 12 x 2 pan, layer noodles, cheese mixture and tomato sauce. Sprinkle bread crumbs on top and top with Mozzarella. Bake at 350 degrees for 45 minutes. Yield: 6 servings at 238 calories each.

    Then just make a salad and you done!!

    You can also add ground turkey for a non vegiterian version.
  • How about Baked Chicken Parmesan with some whole wheat pasta on the side. Then you could make a few sides like a big salad, veggies and skip the garlic bread. I always like to serve Green Beans or Brocoli with my Italian meals. Sautee them up with some olive oil and garlic and top with some parm cheese. Good luck!

    Don't forget to make a nice big salad or a side of green veg like broccoli. Keeps calories in check by balancing out the main dish. :drinker: Have fun!

    Corned beef & cabbage, baked sweet potato, side salad. Light if you mind the portion, easy, delish.
