Stuffed Avocado Pseudo Sushi

Ingredients
* 1 Hass avocado
* 1/3 cup cooked white rice
* 1/3 cucumber, peeled & chopped
* 1 1/3 ounces crabmeat (optional) or cooked shrimp (optional)
* 1 teaspoons pickled ginger, minced (optional)
* 2 teaspoons mayonnaise
* 2/3 teaspoon wasabi paste
* 1 teaspoons light soy sauce
* 1 tablespoons sesame seed (to garnish)
Directions
1 Slice avocado in half and remove pit.
2 Mix together remaining ingredients.
3 Stuff into avocado half, garnish with sesame seeds and enjoy.
Makes 2 servings (half an avocado)
Just made this, and its FANTASTIC!
I suggest using a bit more wasabi, but then again I have a high tolerance for spicy stuff.
