Very Picky can be a bit broad, but here goes.
Cut either a sweet potato or a seeded squash lenthwise (your choice which kind) and place face down on a cooking sheet that has been sprayed with PAM. Bake at 375 for 25-30 mins or until soft to the touch.
Saute cubed chicken breast in 1-2 tbsp of low sodium chicken broth. Add seasoning spices and/or garlic if desired. If you like you can add cauliflower 5 mins before it's done. The cauliflower turns out amazing when you do this.
Meanwhile steam broccoli and carrots for 5-7 mins.
Take squash/potato out, let cool for 5 mins and scoop out the flesh. You can add a bit of butter and/or maple syrup for taste if you like.
