Turkey Escalopes Recipes
Hi,
Has anyone got any recipes using turkey escalopes. It's a rather obscure ingredient and I have no recipes in any of my cookery books, and I don't just want to have it grilled and plain, but I have no idea what I can make with it?
I'm in the UK, so any replies using ingredients I can get here would be most appreciated.

Turkey escalopes with rosemary roasted vegetables
Ingredients
For the turkey escalopes
115g/4oz turkey escalopes
85g/3oz plain flour, seasoned with salt and freshly ground black pepper
2 free-range eggs, beaten
115g/4oz fresh white breadcrumbs
1 tbsp olive oil
For the roasted vegetables
1 carrot, peeled, roughly chopped
1 parsnip, peeled, roughly chopped
85g/3oz new potatoes, halved
2 sprigs fresh rosemary, chopped
2-3 tbsp olive oil
salt and freshly ground black pepper
1 orange, segmented, to garnish
Preparation method
1.Preheat the oven to 220C/400F/Gas 6.
2.For the turkey escalopes, place the seasoned flour onto a plate, the beaten egg into a bowl and the breadcrumbs onto another plate. Roll each escalope first in the plain flour, then dip it in the beaten egg and finally in the breadcrumbs, shaking off the excess between each stage. Repeat with all of the escalopes.
3.Heat the oil in a frying pan, place the coated escalopes into the pan and fry for 3-4 minutes on each side, or until completely cooked through.
4.For the roasted vegetables, place the chopped carrots, parsnips and new potatoes into a saucepan of boiling salted water and boil for 3-5 minutes, or until beginning to soften.
5.Drain the vegetables and transfer to a baking sheet. Sprinkle over the rosemary, drizzle over the oil and season well with salt and freshly ground black pepper, then stir to mix.
6.Transfer to the oven to roast for 15 minutes, or until the vegetables are tender.
7.To serve, place the roasted vegetables onto a plate, along with the turkey escalopes and the orange wedges, to garnish.0 -
