Ok, this doesn't taste like real cheesecake but it's very nice and good for a dessert or treat. If someone can tell me how to enter it into the database I will do so, otherwise the nutritional content is given below.
It serves 8 but I had trouble sticking to just 1 slice so I froze the rest (I don't know how well it will freeze though!).
INGREDIENTS (serves 8)
50g ground almonds
300g Soft Cheese, Less Than 5% Fat (I used Sainsbury's, I'm sure you will have something similar in the US)
1 pack flavoured Sugar Free Jelly (jello?), 23g dry powder
30 sprays lower calorie spray oil (I used Fry Light)
2 tbsp granulated low calorie artificial sweetener, 2 tbsp
Spray a cake tin (one with a removeable base) with half the spray oil. Sprinkle on the ground nuts and sweetener and spray with the rest of the oil. Set aside.
Dissolve the jelly powder in 100ml boiling water and top up to 250ml with cold water. Slowly whisk in the soft cheese until is it fully dissolved. Put in the fridge until it is starting to set and no longer runny.
Pour over the base and put in the fridge to set. That's it!
