Salad with lentilles and broccoli
Ingredients (four servings)
275 grams green lentilles
500 gr Broccoli
2 cloves garlic
2 tablespoons olive oil
1 red onion
Juice of a half lemon or 2 tablespoons vinegar
salt
pepper / red pepper flakes
I read this recipe in the "Allerhande" which is a monthly magazine of a supermarkt in the Netherlands. I changed the original recipe a bit.
Boil the green lentilles together with the garlic in 20 minutes on low fire and with the lid closed. Don't overcook the lentilles.
Break the broccoli in small parts and cook it for only 4 minutes
Once the lentilles are cooked, remove the garlic and pour the water from the lentilles.
Make a dressing with the oil, lemon juice, salt, pepper and mix this dressing with the lentilles.
Add the onion slices and broccoli to the lentilles and stir it once.
In the original recipe also 4 boiled eggs were added, so if you want more proteins in it, you can add also boiled egg to the salad.
The dressing was originally made with mustard, but I don't like mustard, that;s why I used red pepper flakes.
The original recipe was 395 kcal per serving (they used 4 spoons of oil), I reduced this to 212 kcal. By adding an egg per serving, the amount will about 280 kcal, which makes it still a healthy and low calorie food.
