i need carrot recipes please!!!!

my brother (the stupid loving idiot he is :angry: ) decided to join in on that panic buy carrot thing from facebook
and bought 10kgs of carrots!!!!:huh: and gave me 5kgs today:noway:

so yeah, if anyone has lots of recipes or a recipe that uses a lot carrots they are GREATLY APPRECIATED!!! :flowerforyou:

    I hear that many carrots, all I can think if JUICING. That is a lot of carrots. My dad had to do a juicing diet with lots of carrots and his skin started looking orange. :noway:

    haha thats all i could think of when he handed it to me was oh great, orange here i come!

    yeah one problem, dont have ajuicer, unless i borrow my sisters....

    I'd definitely try some carrot cake (yumm!).
    You can cut some of them and just put into freezer in small bags. Then it's easier and faster to put them in whatever you are cooking.

    Courtesy my friend Denise, my best cooking buddy from Irelend:

    What I like doing is you get a saucepan, chop your carrots into roughly thirds (depends what size carrots, I suppose you could do with just baby carrots instead), and place them standing up in the saucepan, all wedged in together. (You have to guesstimate what saucepan to use/how many carrots the first time you do it). they need to be squished in so they all stay standing up.

    Pour in enough water so that it comes half way up the carrots, wedge a few bay leaves between the carrots, and a bit of black paper, then add a few little chunks of butter. Boil with lid on til there is only a tiny bit of water left sprinkle in some brown sugar and add a bit more butter on on top (this will facilitate the traveling of the sugar to the bottom of the pan). take lid off, let cook for maybe another tin minutes until all butter/water has dissappeared. You can carefully unwedge on carrot to see if its done yet - the bottoms should be brown and caramelised. If not pop it back on the stove for another few minutes.

    If you are short for time you can nuke the carrots in the microwave first. Is not the normal way of doing them but I like it because if you have non shakey hands you can serve the carrots by putting a plated upside down on top of the saucepan, inverting and removing the saucepan so that they still end up standing up like soldiers. Only downside is that you need a decent non stick saucepan or it will be a nightmare to wash up!




    ME on the other hand?

    I'm lazy.

    Boil carrots. (fill so you don't have too much water or else you'll drain out most of the nutrients)
    Drain slightly

    Spray pan with PAM.

    Dust with brown sugar.

    Transfer carrots.

    Dust with more sugar.

    Cover for a few minutes.


    Remove.
    Eat.


    The first recipe is much yummier and more cooked but again, very
    very
    lazy.

    I LOVE CARROTS.

    I think on saturday i might go to my friends and make a carrot cake with her, she recently hurt her ankle (very bad sprain) so it will help cheer her up :bigsmile: ! (that and i dont have any cake tins :indifferent: )
