A very simple sauce that I make to stuff into canneloni uses frozen spinach, defrosted and slightly warmed, mixed with low fat cream cheese, sauteed garlic and mushrooms. Stuff this into canneloni tubes and cover with a homemade tomato and onion sauce, then bake in oven for 30 minutes.
If you wanted to cook pasta and fold this into the cream cheese mix while gently warming it, I guess that would work. Maybe add low fat fromage frais to make the sauce more liquid? I don't know the SmartOnes meal you refer to, but I hope these might help you.0
