make your veggies your star side dish and or double up on veggies. I will roast a whole sheet pan of mixed veggies coated with olive oil and fresh herbs (fingerling potatoes, carrots, onions, brussel sprouts etc) and use that as my side dish. usually low calorie and tons of flavor and nurtition. I used to do the meat, starch, veggie plate now it is all mixed and i don't miss it at all
  • sweet potato fries is one of my favorites! or cauliflower mashed potatoes!!
  • ooh how do you do the cauliflower mashed potatoes?

Steamed veggies are good, just add a little spice (pepper, curry, etc) and they are easy with all the new steam in bag options.

Orzo with veggies, green bean and feta saute, homemade coleslaw, fruit salad, sliced tomatoes with balsamic vinaigrette...just a few I like. :)
  • I'd be interested in how you make your homemade coleslaw..;)
