Spanakopita Orzo - 165 calories per serving!

This is from Rachael Ray's newest cookbook called Look and Cook...absolutely LOVING this cookbook by the way!
1/2 1lb orzo pasta, cooked
1 small onion, finely chopped
3-4 garlic cloves, finely chopped or grated
1/2 cup vegetable stock
3 cups spinach, divided
1 cup reduced fat crumbled feta cheese
1 Tbsp Extra Virgin Olive Oil
In a medium skillet, heat 1 tbsp oil over medium high heat. Add in garlic and onions, cook 5 min or until tender. Meanwhile in a food processor, combine vegetable stock and 2 cups spinach; process until smooth. Once onions and garlic are tender, add in spinach mixture and stir until heated through (About 30 seconds). Remove from heat and add in remaining spinach and feta cheese.
This makes 8 1/3 cup servings.

Calories 165, Carbs 23, Fat 5, Protein 8, Fiber 1, Sodium 280
I served this with sirloin tips and a green salad with red wine vinegar dressing.

Thanks, I have a son that is Vegetarian (really pescatarian and doesn't like fish anyway) so I am always looking for recipes that are healthy, low calorie and meatless. I could serve it with meat for the rest of us and fake meat for him too. Sounds good.0

I had it last night, I didn't have any poached chicken so I used some grilled chicken i had left over, It was really good. my partner suggested some cherry tomatoes in it as well (roasted of fresh) so I might add then next time for some more veg.0

I have been making this for awhile but lately I made it with quinoa instead of orzo. Not bad at all.0

I made this last night to go with salmon and roasted asparagus, it was so yummy! I used shallots instead of onion and added some fresh lemon juice right before serving. So delicious!0
