Hey All,

I am about to start back at uni and my partner back at work and I am looking for a low cal granola/muesli bar recipe, I have been trying the low fat bars from the store but they all have heaps of sugar or preservatives.

Please share as I need something to get through a 3 hour lecture this term!

    This is more a granola recipe, and not so much a bar, but you may be able to use a little more egg white as glue and shape it into a pan. I also posted on that isn't exactly a granola bar, but it's an almond cake that is great and packs an energy punch.

    Granola Mix

    2 Cups oats
    2 Tablespoons flaxseed meal
    1/2 cup cashews, chopped
    1/2 cup raw almonds, chopped
    ¼ cup pumpkin seeds
    1/4 cup sunflower seeds
    ½ cup no sugar maple syrup
    ¼ cup honey
    1 egg white
    1 teaspoon vanilla
    ½ teaspoon cinnamon
    ½ teaspoon nutmeg
    ¼ cup dried apricots, chopped (optional)
    ¼ cup raisins or craisins (optional)
    ¼ cup dried pineapple, chopped (optional)
    ¼ cup dried mango or apples, chopped (optional)

    Serves: 10

    Preheat oven to 350 degrees F.

    Spray cooking sheet (with lip). Spread oats, wheat germ, nuts, and seeds on sheet and bake for 20 minutes. Remove from oven, lower temperature to 250 degrees. In a bowl, mix syrup, honey, egg white, cinnamon, nutmeg, and vanilla. Add oat mix. Return to cooking sheet. Bake 1 hour, 20 minutes or until browned. Cool. Break up, mix in dried fruit if desired, and serve.

    Tip: Spray your measuring cup with cooking spray before measuring honey and syrup – will slide right out! Read the packages on the dried fruit – avoid “chips” or heavily sugared options.

    Serving Suggestion: Top non-fat yogurt with granola or pack in baggies for a portable snack.

    • Try any mix of dried fruit

    Nutritional Tidbit: Oatmeal is rich in both soluble and insoluble fiber, can lower cholesterol, and reduce the risk of Type 2 diabetes!


    Almond Cakester

    Cooking Spray
    2 cups unsalted almonds
    1/2 cup no-sugar maple syrup
    1 packet Splenda
    1 Tablespoon Pumpkin Pie spice
    ¼ teaspoon salt
    1 egg white
    1 Tablespoon powdered sugar

    Serves: 10

    Preheat oven to 350 degrees

    Spread almonds in a shallow baking dish, toast in oven for 5-7 minutes. Remove from oven and allow to cool. Cover baking dish with tin foil. Spray with cooking spray.

    In a bowl, beat egg white until very soft peaks. Add syrup, Splenda, pumpkin pie spice, and salt. Mix well. Fold in almonds. Pour mixture into baking dish, spread to edges. Bake for 25 minutes. Allow to cool. Dust with powdered sugar, cut into squares, serve.

    Tip: This is a great, sweet recipe for diabetics or those with a low-carb diet.

    Options:
    • Swap cashews for almonds
    • Add a dash of vanilla around the holidays
    • If pumpkin pie spice is unavailable, use cinnamon with a dash of nutmeg
    • Top with whipped cream

    i personally have no recipes, but definitely check allrecipes.com :smile: you can search by low fat, diabetic, whatever, and it includes nutritional values in each recipe.
