Apple Bran Muffins
1 1/4 cups bran flakes cereal
1 1/4 cups all-purpose flour
1/3 cup brown sugar
1 TS ground cinnamon
1 TB baking powder
1 1/4 cups apple juice
1/4 cups margarine, melted
1 TS vanilla extract
1 apple, peeled, cored and chopped fine
Preheat over to 375 degree, (190 degree C), grease muffin tins.
In a mixing bowl, combine bran flakes, flour, brown sugar, cinnamon and baking powder. Stir in
apple juice, margarine, vanilla and apple. Spoon the mixture into the greased muffin tins.
Bake at 375 degree for 25-30 minutes.
Servings: 12

Bran flakes cereal of any kind? I was wondering this because it is hard to find this kind of cereal in my stores well the lind with fruit in it so I was unsure what to look for. These sound so good and every once in a while I would like a good muffin where I am not killing my caloric intake for the day.

Any kind will do. The Fry's where I live has there own brand of Bran Flakes. I'm sure you could use this recipe with any of your favorite cereals though. Maybe Total would be another good option.0 -
