Dee Dee's Bran muffins
Bran Muffins:
Mix:
3/4 cup skim milk (sour with a bit of lemon juice)
1 cup Oat bran
2 TBS chia seeds
1/4 cup of water.
Let stand for 5 minutes:
Add
1 whole egg
1 egg white
1TBS EVOO
1/4 cup of real maple syrup
1 scoop of protein powder (mine is based on Swanson 90 calories per scoop with 20 grams of protein)
1 tsp real vanilla
2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp ginger
1 tsp salt
Stir.
Add
1 cup whole wheat pastry flour
1 tsp of baking soda
Mix lightly. (The soda now starts to react so you don't want to stir too hard)
Stir in raisins.
Drop scoops into prepared cup cake tins.
Bake for 10 minutes at 400 degrees. F.
YUM.
Not really sweet but has a nice taste and texture. If you wanted it sweeter add stevia.
