  • Oh goodness there are so many. I suppose it depends on what you like and what you don't. Yesterday I made a chickpea/cauliflower curry and it was DELICIOUS. I'm not vegetarian but every one in a while I decide to not eat meat...if you like curry you might like this:

I nix'd the oil and the salt (and the peas b/c I didn't have any) and added some cumim, cayenne, and some more garlic (b/c I think the recipe needed some more pizzazz ahah) but otherwise it's the same. It's really tasty and vegetarian :D HOORAY

If you search for vegetarian on this site you'll find LOTS of recipes, or if you google there are tons too...and they're usually pretty good.

I made this really yummy Macaroni Souffle a couple times. Here's a recipe for it, although it's a little different than the one I used. Actually, the recipe is the same, but some of the cheeses are different and Dijon mustard is on this recipe list. I used parmesan and cheddar cheese. The first time I made it, the paprika was overwhelming, so the second time I only put 1/8 tsp in.

  • I love anything with mushrooms, because most recipes they won't taste like mushrooms, and they're so meaty! Our household is big fans of Portabello "Philly Cheese Steak" Sandwich http://www.eatingwell.com/recipes_menus/collections/healthy_vegetarian_recipes#0

But my absolute fave is Portobello burgers. Just mix olive oil, balsamic vinegar and italian seasoning. Grill, one side, then add diced tomato into the side that had the stem, cover with mozzerella cheese. Sooo nom!
