Mexican Shredded Chicken Nachos?!?!?

So, I really want some mexican food for dinner tonight, but have absolutely no idea how to make a white cheese dip for the nachos. Also, if anyone knows a good cheese enchilade recipe???
If anyone can help me out here, It would be great!!! Thanks Sooooo Much :)

    Check out "Cook Yourself Thin" They have great recipes using alternative ingredients that taste wonderful, including a great recipe I have tried for Green Chile Enchilladas. I love this book. I am not much of a cook (and the fact that I don't have a lot of time in the evenings doesn't help), but the recipes are easy to follow and taste amazing. Good luck!

    Also, to make a cheese sauce...you could use any mexican melting cheese. Walmart sells some reduced fat kinds...look for Queso Fresco types..like Queso Quesadilla, etc. I also LOVE melting munster cheese on my nachos (not reduced fat but watch how much you add on lol)

    go to www.allrecipes.com. You can find anything there... you can even click on "ingredients" and type in anything you want AND don't want. Plus, all the nutrition info is there!!! It's my favorite. Speaking of Mexican... I found one there one time where you just take chicken breasts, shake them in taco seasoning and dump a bottle of salsa over them then throw em in the oven to bake. When they are cooked through, sprinkle some shredded cheese over them and broil for 5 mins... little low fat sour cream on the side and voila... quick and easy... AND FABULOUS!!

    Low cal nachos: cut up corn tortiallas into triangles, spread on cookie sheet and lightly spray with PAM or some type of cooking spray and bake them in the oven. Use fat free cheese and/or sourcream.

    For enchiladas, I only make the green type, as I don't care for the red sauce, but if you do prefer it, cut it with some low-sodium chicken broth for a better taste. Take corn tortiallas and warm in the mircrowave, then dip each one into the enchilada sauce. Fill them with fat free cheese and onions then roll up. OR instead of rolling them up individually, lay them out onto a baking dish and layer: tortilla, chese, onions (you can use olives, jalapenos, chicken, whatever you like) then start again. make sure you drizzle edges of tortiallas with more sauce before baking in the oven, as the edges tend to dry out. Cover with foil then bake in the oven until cheese is melty.

    quick tip: they sell canned chicken breast that I sometimes use in a pinch! it's quick, but I find it a bit bland so I'll add garlic, onions, pepper before I use it.

    I actually made something like this last night. I added black beans to the mix. Since I wanted it to be really spicy, I also added jalapenos and chopped onions.
    Another thing I did to make 2 dishes out of one... some of the chicken I left in the juice and made a soup out of it. YUMM!!
