I'm really interested in this! I saw Kale at the market and it has, I think, the highest nutritional value rating in the store! I would love to see what to use it in and how to eat it :)

Go to www.food.com and type "kale" into the search box...it returned over 600 recipes with kale in them. The best part is, this site also gives you the nutrition facts of each recipe.
  • Wilted kale is delicious with garlic!

You can also mix it with chopped turkey kielbasa. Yum!

  • A friend was just telling me about Kale chips! She made them last week and said she and her kids devoured them...didn't even think they were a vegetable. This was teh recipe she gave:

    1 Bunch Kale
1 Tbsp Olive Oil or Canola Oil Spray

    1. Preheat oven to 375 degrees.
    2. Wash and remove stems off the kale and cut leaves into 2 inch pieces.
    3. Divide the kale between 2 cookie sheets lined with a Silpat or parchment paper, drizzle with oil (or spray with oil) and toss to coat (make sure there is a bit of space between the pieces of kale so they don’t steam).
    4. Season with salt or favorite spice
    5. Bake for 18-20 minutes (keep an eye on them during the last few minutes of cooking so they don’t burn).
    6. Serve.

I love, love, LOVE kale chips!!

You can make them w/ so many different flavors. You can use olive oil (or the spray) and massage in honey - my KIDS LOVE them this way. You can make them spicy w/ cayenne, use garlic to flavor them etc, etc.

They crisp up wonderfully. Sometimes I won't break them into small pieces and just cook them as individual leaves, my kids would always say they were eating trees.
