Spinach & Sun-Dried Tomato Quesadilla's
10 oz fresh baby spinach
2 TB water
1 cup non-hydrogenated soy cream cheese
1/2 cup packed in oil sun-dried tomatoes, chopped
salt & pepper to taste
4 large flour tortillas
2 TB olive oil
*I like Tofutti soy cream cheese, but you can use regular cream cheese if you prefer.
Put spinach in a glass bowl with the water. Microwave until wilted, about 3-4 minutes. Cool, then drain water from spinach, set aside.
Combine soy cream cheese, tomatoes, spinach, salt & pepper. Spread evenly over half of each tortilla. Fold in half.
Heat oil in pan. Cook each tortilla until browned.
