Pretty much any!! I love to just sear them, if they're large sea scallops and serve with a baked sweet potato or roasted asparagus with a lemon vinaigrette and a salad. To sear them, just pat them very dry with a paper towel and pepper them, get the pan very hot with a mixture of half olive oil and half butter... just before putting in the pan, you can salt them (if you allow the salt to sit on them, it will draw out all the moisture and give you a soggy texture and no color on your sear.) When the pan is smoking, gently add them and sear for a minute and a half on each side.
Or, if you enjoy other seafood, you can make a cioppini with bay scallops, tilapia and shrimp in a spicy tomato and white wine broth. If that sounds interesting to you, message me and I'll give you my recipe for that.1 -
Scallops, while low in calories, are high in cholesterol (as are shrimp) so if that's something your doctor said to watch you may want to be aware of it.1
