This is a really good light desert:
Combine these items into a saucepan and bring to a boil. Stir constantly until it thickens:
1 Tbsp Cornstarch
1/4 Cup Sugar
1 Cup Water
1 Pkg sugar-free raspberry gelatin
Put 4 cups of fresh raspberries into a 9 inch graham cracker pie crust. Pour the gelatin mixture over the berries and chill for 2-3 hours.
Add some whipped cream!

Sounds delish! This is nearly exactly like my Aunt's recipe for fresh peach pie - which is totally awesome. The Only pie I truly LOVE! Fresh fruit that hasn't been cooked, is a billion times better in a pie/dessert I think!0
