Simple Homemade "Ice Cream" from a guy
A nice simple recipe for some low-fat great tasting ice cream is below:
2 small boxes of sugar-free pudding
1/2 of a 12oz fat-free whipped topping
2 1/2 cups skim or 1% milk
small can of sweetened condensed milk
I am not a fan of Aspartame but there is too much sugar if you use regular pudding AND the sweetened condensed milk. Do not use the whole can of sweetened condensed milk since even the small can has 250g of sugar. Use maybe 1/8 to 1/4 cup of sweetened condensed milk and then add an extra half cup milk. I usually whisk everything together but I add the whipped topping last after everything else is blended. I whisk by hand and it works well. I use an old Breyer's plastic container to freeze. It helps iif you pre-freeze the container for a day first. After the container is in the freezer for 3 hours, take it out and stir it up well. Then, let it freeze for 24 hours. I have tried not using the sweetened condensed milk but the ice cream will turn out very "crystally." The whole container still has only 20g of fat versus 70g plus in low-fat ice cream. I like it. I have also found that if you use plain vanilla pudding and then add peaches in addition to everything else--it is yummy. Try it.
