acorn squash

I just signed up for doortodoororganics.com, and am receiving my first organic fruit/veggie box on Wednesday. It includes an acorn squash, and I have no idea how to make it. I have roasted them before, but, they never turn out right. I always have good intentions when buying them, but, they always sit around and never get used. So, I was hoping to find some good recipes, in advanced! Thanks!

    cut it in half and poke holes in it. Turn it flesh side down in a pie plate with water and microwave for 10 min. Then Turn over and scoop out the flesh. I like it just like that with maybe some salt and pepper or some butter. You can also top with sugar. Enjoy

    Hmm, I guess it depends on your taste buds. I'm pretty simple, so I just split it in half, cook it in the microwave with a little water, add some salt and pepper and I'm good! I LOVE acorn squash! Good luck! I'll be checking back to see if anyone has any good recipes for you... :smile:

    I make a stuffing with wild rice, onions, celery, shredded carrots, sage and whatever other spices and fill the halves with it, bake for 30 - 45 minutes covered at 350 (depends on the size, organics are usually smaller and sweeter) and enjoy the deliciousness!
