Cookies
These are a few recipes even my kids enjoy. They are out of a book called "60 Days of Low-Fat Meals" By MJ Smith.
Chocolate Oatmeal Cookies
2/3 c Flour
2/3 c Sugar
1 c Quick Oatmeal
1/3 c cocoa
1 tsp salt
2 egg whites
1/3 c corn syrup
1 tsp vanilla
Preheat oven to 350. Spray baking sheet with nonstick cooking spray. In a large mixing bowl, combine flour, sugar, oats, cocoa, baking bouder and salt. Add egg whites, corn syrup and vanilla. Stir just until moist. Drop by spoonfuls onto cookie sheet. Bake for 10 minutes just until set. Cool for 5 minutes on the cookie sheet. Remove to wire rack.
Yield 24 cookies

Coconut Lover's Macaroons
1/2 c egg whites (separate 4 large eggs)
1/4 tsp salt
1 1/4 c sugar
1 tsp almond or vanilla extract
2 1/2 c shredded coconut
Preheat oven to 325. With electic mixer, beat egg whites and salt in a large mixing bowl, just until soft peaks form. Gradually add sugar, beating until stiff peaks form. Fold in vanilla and coconut. Drop batter from spoon onto a baking sheet that has been sprayed with nontick cooking spray. Bake for 20 minutes. Cool 10 minutes before removing from baking sheet.

Thank you for the recipes. I what to make the chocolate oatmeal one today. in the directions it calls to add the baking powder, but in the list of ingredents it does not say how much. Do you remember?
