Easy -- Healthy -- Filling Parmesean Chicken!!! Must try!

Such an easy meal! I love this served w/ the baby red potatoes and green beans with rosemary sauce steamers (Green Giant I think???).
Ingredients
1/3 c panko or Italian dried breadcrumbs
1/3 c grated Parmesan
1 1/2 lbs chicken breast sliced in half
2 T extra-virgin olive oil
1 t dried thyme
coarse salt and ground pepper
Directions:
1. Preheat oven to 450.
2. In a small bowl, mix together panko and Parmesan.
3. Slice each chicken breast in 1/2 length-wise
4. In a 9-by-13-inch baking dish, toss chicken with oil and thyme; season with salt and pepper.
5. Arrange chicken in a single layer and sprinkle with leftover panko mixture.
6. Bake on upper rack until topping is golden brown and chicken is cooked through, 15 - 20 minutes.

I knew I was forgetting something!!! The nutrional value is for 4 servinsg, but for each serving you get both pieces of the chicken breast. I often get by with just having 1 of the chicken breast pieces and then some veggies on the side. If you do this, it's only 150ish cals!0 -
