I love this recipe! My father-in-law taught it to me and its good for you, a little over 300 calories! The serving size is for 1 but more than enough for 2. :-)
You'll need:
2oz whole wheat spaghetti (I use Barilla)
1 garlic clove
6-10 grape tomatoes
1 TBSP evoo
Black pepper to taste (I like to use a grinder)
Basil to taste (I don't use fresh leaves)
Salt to taste (I use sea salt)
Grated parmesean cheese (optional but sooooo good)
Boil spaghetti as directed
Add salt to taste
Meanwhile...
Dice garlic (very small)
Chop tomatoes in half
Remove spaghetti from fire and drain (return/keep in the same hot pot)
add all other ingredients to spaghetti (except cheese) and stir
Voila! Top with cheese and enjoy!
