Italian Cabbage Casserole

This is from Taste of Homes Diet Comfort Food, kind of like Cabbage Rolls but much easier!!

1 medium head cabbage, coarsely shredded
1 lb lean ground beef or turkey
1 large green pepper, chopped
1 medium onion, chopped
4 cloves garlic, chopped
1 14 1/2 oz can diced tomatoes, undrained no salt added
1 8 oz can tomato sauce no salt added
3 Tbsp tomato paste no salt added
1 1/2 tsp dried oregano
Salt and Pepper
1/2 cup shredded part-skim mozzarella

Preheat oven to 350 and grease an 11x7" baking dish.

Place cabbage in a steamer basket; place in a large saucepan over 1 in of water. Bring to a boil, cover and steam for 6-8 minutes or until tender. Drain and set aside.

In a large nonstick skillet over medium heat, cook and stir the beef or turkey, green pepper, onion and garlic until meat is no longer pink; drain if needed. Stir in the tomatoes, tomato sauce, tomato paste and seasonings. Bring to a boil. Reduce heat; simmer, uncovered for 10 minutes

Place half the cabbage in the baking dish, top with half of beef mixture. Repeat layers. Sprinkle with cheese. Bake, uncovered for 15-20 minutes or until heated through.

Makes 6 servings

    I make something very similar, my family calls it Cabbage SToop!! Instead of the paste, I use juice and then I also add beef broth! It is a great anytime snack!!
