Twice baked potatoes - microwave small potato, cut in half, scoop out pulp and set aside. Mix cheese wedge with lite (or ff, your preference) sour cream, then mix that into reserved potato. Put potato mixture back in potato halves, put in oven until a little brown on top. Depending on whether I eat it as a meal or a side, I might add in broccoli, chopped chicken breast, etc.

    LOVE this stuff...

    - spread on celery or any other veggie
    - spread on crackers
    - on whole wheat toast for breakfast
    - mixed into scrambled eggs
    - on a sandwich instead of cheese

Can't wait to try the pasta recommendation too!
    Great thread!

I have used it a lot to make a low fat, low calorie alfredo sauce to put over whole wheat pasta. It's a Hungry Girl recipe and is VERY tasty. Just cook it over low heat in a small pan or microwave it.

1/2 Wedge The Laughing Cow Light Cheese
1 teaspoon Fat Free Sour Cream
2 teaspoons Kraft Reduced Fat Parmesan Cheese

This sounds AMAZING. *scribbles recipe down*
