A tasty way to add fruit to your day

Im always on the look out for great healthy recipes...even when i wasn't cooking them, lol
Now that i am, i tried this one and fell in love...

Caribbean Rice

2 cups cooked rice ( i used brown rice)
11oz can mandarine orange, drained
1/2 cup chopped red pepper
1/3 green onion sliced
1/4 tsp ground ginger.

Combine all ingredients. Stir and cook on med/high until thoroughly blended and heated through.


Had some left over...i add a little bit of splenda and cinnamon, and it was great for desert at lunch the next day, although, i did pick out the peppers for that, lol.

    I mix milk, unsweetened cinnamon apple sauce, and raisins with old brown rice and have dessert for lunch!
