I've been really craving some chicken fingers and fries lately, but I'm not ready to jump off the bandwagon. Tonight, I'm going to pick up some boneless skinless chicken breast, a couple potatoes, and go home and bake these (chicken breast, cut into strips, season and bread, and bake on a cookie sheet/broiler pan - "fries" - actually, you do the same thing, minus the breading, for the fries).
Got me to wondering, what "old" comfort foods do you still eat, but in a modified form?

I have know idea if this would work, I will have to try it some time, but how about Oat Bran instead of bread crumbs. Then you are not adding any sodium with the beading mixture, and any sodium you add would only be the stuff you actually see in your seasonings. Sodium may not be an issue for you, but I thought I would throw that suggestion out.0

Great idea! I'm fortunate that I'm still young enough that my weight has not caught up to me in the form of high cholesterol or blood pressure, so so far sodium isn't an issue, but I just might have to try that in order to keep it that way!0

I do that all the time with chicken! My son loves chicken nuggets like that. MUCH healthier than Mcdonalds lol. There's soo many things that I change in recipes to make them healthier. Almost anything can be changed and still taste just as yummy. Mac and cheese is one of my faves lol.0

For Fries, I usually spray a cookie sheet with pam, cut up a potato for each serving, sprinkie seasoning on each fry(I usually use Lowrys seasoning) then spray the top of the potatoes. Bake in oven fore however long it takes to bake a potato, after about 15 or 20 minutes I usually turn them over, to cook the other side too. If you leave the skins on, you are leaving most of the nutrients on also.0

Although I pretty much have to cut back on sodium, I figure if I had done it earlier my taste buds would be more used to spices rather than craving salt as much. Also, even if it isn't a problem for you, once you look into how much salt is suggested for a day and how much you are actually eating, you might want to cut down anyway.0
