Tortilla Crusted Tilapia

I just had this for dinner tonight, and i wanted to share it with you all!! I created it because i saw in the grocery store the other day pre-made tortilla crusted tilapia but it had 350 calories, and 1050mg of sodium in ONE FILET! so i decided i was going to create my own, healthier version.

TORTILLA CRUSTED TILAPIA & HOMEMADE CORN SALSA

TORTILLA CRUSTED TILAPIA
[serves 4]
4 tilapia fillets
tortilla crumbs (you can find them in the gluten free section in the grocery store)
salt & pepper
extra virgin olive oil

1. in a skillet, heat up a little bit of olive oil.
2. season the fillets with salt and pepper.
3. coat each fillet with 1 tablespoon of tortilla crumbs then put into skillet and cook 3-4 minutes per side.

CORN SALSA
[serves 4]
2/3 cup sweet white corn kernels (i used frozen, then thawed them in the microwave).
1/2 jalapeno, seeded and diced
1/4 cup red onion, diced
12 grape tomatoes, diced (you can used other kinds of tomatoes, i just have A LOT of grape tomatoes at the house haha)
1 tablespoon fresh parsley, chopped
1 teaspoon honey
salt & pepper

1. combine ingredients and let sit for a bit for all the flavors to mingle and get happy :)

serve the salsa on top of your tortilla crusted tilapia & BAM! you have an amazingly fresh, healthy main dish.

Corn Salsa = 41 calories (2/3 cup)
Tortilla Crusted Tilapia = 130 calories (1 fillet)
