HEALTHY SPICED PORK ROAST- A MUST MAKE

The best part of this dish for me, besides its the best tasting pork I have ever had, is that I make it up ahead of time. Just coat the meat with the rub, put it in the dish with the veggies cut and ready. Then add the broth and pop it in the oven when its go time (just needs an hour and a half).
Its GREAT to make on a Saturday night and throw in the oven after church for Sunday dinner, or to make Saturday morning and let sit all day for dinner, or I even make it on a weeknight, then my daughter adds the broth and pops it in the oven when she is home from school. I hit the gym on the way home from work and come home to a perfectly cooked delicious dinner to go with some steamed mixed veggies or a green salad.
