Oven Baked Onion Rings

1/4 c +2 tbsp flour
1/2 tsp salt
1/8 tsp ground red pepper
1 large peeled Spanish onion cut into 1/4 slices
3 egg whites, lightly beaten
3/4 c dried bread crumbs

Preheat oven to 400. Spray nonstick baking sheet with nonstick cooking spray. On sheet of wax paper, combine flour, salt and red pepper.

Separate onion slices into rings. Dredge each in flour and then egg whites. Coat in bread crumbs. Arrange on a baking sheet.

Bake on top onven rack for 10 minutes until browned. Turn and bake 5-10 minutes longer.
