Favorite Vegetarian Dishes

I am trying to incorporate a new veggie dish every week. By using MFP, I have started cooking just about all of my meals!!! It's great, but I want to branch out. Please post favorite dishes, recipe links, and other veggie ideas. Also, anyone ever made parsnips???

    this is my absolute favorite: 101cookbooks.com mushroom casserole. SO yummy
    also black bean burritos from allrecipes.com is yummy (and meat/potatoes-husband-approved)
    stir-frys are easy to add veggies to
    and of course pretty much any variation of quiona (there was a post on this last week)
  • A lot of ethnic dishes are veggie. Veggie Pad Thai, or Vietnamese Pho is soooo filling and flavourful and isn't high in fat at all. Also they're quite versatile and you can add whatever protein and veggies you want to them.

    I love to make my own seitan - this is the only recipe I've ever used.... it's so fabulous that I've felt no need to try anything else. Seitan can be used in place of meat in just about any recipe - I use it in salads, wraps, fajitas, sandwiches, chilis.... probably a millions things to do with it.

  • Oh, and for parsnips, roasted parsnip soup is pretty yummy. Just cut them in cubes, toss with olive oil and roast for 20 minutes, Then take them out, saute with celery, onion, garlic and whatever other veggies you like, add vegetable stock and simmer for 20 minutes, then buzz with a hand blender thingie. You can add coconut milk for added creaminess. I usually season with rosemary and thyme, or some curry powder.

    Yesterday, I made the most yummy dish. Roast a portobello mushroom cap (drizzled with balsamic vineger) for about 25 minutes at 425 degrees (F), then sprinkle it with 1 T blue cheese and return it to the oven for about ten minutes.

    I ate mine plain, but it would be great on a bed of spinach, or as a burger substitute, or cut into wedges as an appetizer...

    I love the fatfreevegan.com great recipes and most are pretty easy to make. My favorite Veggie soup.

    4 cups veg broth
    2 lbs cut up vegs
    2 cans beans
    1 can diced tomatoes
    1/4 tsp cumin
    1/4 tsp paprika
    1 med onion
    5 cloves garlic

    saute onion and garlic until onion softens, add all of the ingredients and let cook until the veg are a little soft.
