Butternut squash chilli and apple soup

Hi there,
Thought I might share a recipe I just made which was delicious. For anyone who likes some spice and sweetness you might like this too and its v low in cals.
I used:
1 Leek
1 small apple
650g Butternut squash cubed
half a red chilli - this made it quite spicy but just right for me
pepper and salt
2 stock cubes in 750ml water
1 teaspoon olive oil
Saute the leeks for a couple of minutes.
Add the squash, diced apple and stock - bring to boil
Simmer for 10mins
Add chilli and simmer for a further 5mins
Add salt and pepper to taste
EAT MMMMMHHHHHHHH yum yum!!!!:happy:
