Salmon with Tomato Bernaise Sauce
I took this off the back of a Bearnaise sauce packet and it is awesome, thought I would pass it along.
4 salmon fillets
1 tbls olive oil
4 tbls butter
1/4 cup onion
1 roma tomato
1 cup 2% milk
1 packet Bearnaise sauce mix
Preheat oven to 425.
Arrange salmon in shallow baking pan. Season with salt and pepper. Brush fillet with olive oil. Bake 20 minutes or until fish is flakes easily.
Meanwhile melt butter in large skillet and cook onion, stirring occasionally for 2 minutes. Add tomato and cook 1 minute. Stir in milk and Knorr Bearnaise sauce packet, and remaining butter, stirring constantly, until sauce thickens, about 1 minute.
Poor sauce over salmon.
