FAA abstinence questions

Trying to find members who are either gluten free or curently following the food addicts annonymous food plan that can give me some idea of what to expect from these different grains. Currently I have been alternating between brown rice and mashed potatoes as my sides for dinner. I am looking for info on taste and texture for any of the following: amaranth, barley, millet, or buckwheat. Any recipes/ideas on preparation in addition to where I might find them would be helpful. Need some fresh ideas before the brown rice kills me.
