Red Pepper Bows with Peas-very tasty!
This is a great recipe that I just made for the first time. Very easy to make very filling and very tasty. This recipe serves 4; 1 serving size is 1 cup! (nutritinal info below recipe)
Pasta:
2 Cups uncooked Farfalle (bow-tie) pasta 6oz (i use whole wheat pasta)
1 cup cooked green peas
2 tablespoons chopped parsley
Prepare Sauce cook and drain pasta as directed on package (no salt)
Red Pepper Sauce:
2 medium red bell peppers, chopped (2 cups)
1/2 cup chicken broth
1 tablespoon chopped fresh or 1 teaspoon dried oregano leaves
1/4 teaspoon pepper
1/4 teaspoon salt
1 tablespoon tomato paste
1 tablespoon balsamic vinegar
1 teaspoon honey
Cover and cook bell peppers, broth, oregano, salt and pepper in a 2 Quart saucepan over medium-low heat for 20 mins or until bell peppers are tender (stirring occasionally). Stir in remaining ingredients; remove from heat. Place mixture in blender, on medium speed, blend until smooth.
