Potato-Bacon Soup - Yummy Low Calorie Soup!

Hey! I am stealing this from a weight watchers cook book but a friend asked me to post it! It is soooo good!!

Potato-Bacon Soup

2 slices bacon (uncooked), cut into 1/2 inch pieces
1 small chopped onion
4 cups frozen Southern-style has brown potatoes (such as Ore-Ida)
1 can (14-ounce) fat-free, less sodium chicken broth
1/4 tsp. salt
1/8 tsp. pepper
1 cup 1% low-fat milk
2 TBSP. chopped green onions
1/2 cup (2 ounces) reduced-fat shredded extra-sharp Cheddar cheese

1. Cook bacon in a large saucepan over medium heat 2 minutes, stirring frequently; add onion.  Cook, stirring frequently, 5 minutes or until bacon is crisp.
2. Add potatoes to bacon mixture, stirring to coat with bacon drippings.  Add broth, salt, and pepper, cover and bring to a boil over high heat for 6 minutes, stirring frequently.
 Mash potatoes with a potato masher until soup is slightly thick.  Stir in milk.  Cook, stirring constantly, 1 minute or until thoroughly heated; remove from heat.  Ladle soup into bowls; sprinkle evenly with green onions and cheese.  Yield:  4 servings (1 cup).

                   CALCIUM: 235mg
