Yummy Fish and Spinach

A lady from work gave me this recipe and I think it is delicious so I thought I would share. This is for one serving. Fry 1 slice of bacon in a frying pan. When it is crisp remove, set aside and crumble it up. Next add 1 fillet of any fish (I used catfish) and fry that and remove and set aside. Next add 2 cups of spinach and and 2 tablespoons of sliced almonds and the crumbled bacon back to the frying pan and stir around until the spinach wilts. I served the fish and spinach with 1 cup of brown rice and it was yummy and it ended up being around 450 calories (including the rice) but it will vary depending on what type of fish you use . This is my first time posting a recipe, so I hope I did it right. :)

    That sounds good! My husband loves fish and spinach - I never would have thought to put them together!

  • I had broiled catfish and a spinch salad last night for dinner. I wished I'd seen this recipe, I would have tried this instead.:sad:
  • Oh and I added a tablespoon of Franks RedHot sauce to my fish. I like it spicy! :)

    Anything is good with Bacon on it!!!! Yum sounds good!
    Cooking without Bacon and unhealthy things that make us fat is the tricky part. I love the Fat!

    How about cook Garlic, Onions,cabbage, and celery in some chicken broth with a touch of Olive Oil. when their soft and onions translucent add the fish. and some seasoning.
    If you switch the spinach out for the cabbage just put the spinach in last. Best to not overcook it.

    For a twist add Curry powder and red pepper powder. or stewed canned tomatoes.
