Spicy Pulled Chicken

This is a SUPER simple recipe that makes a lot! Perfect for a healthy taco/burrito/enchalada filling or I simply eat it with lettuce and a table spoon of extra Salsa (instead of dressing)
3-4 Raw Boneless Skinless Chicken Breast
1 Can of Black Beans (Rinsed and Drained)
1 Can of Chili Ready Tomatoes (with juice)
1 Sm. Jar of Pace Salsa (hot or medium)
Throw all ingredients in a Slow Cooker and allow it to cook on low for 6-7 hours.
I put the chicken in while its still frozen. When there is an hour or so remaining I will shread the chicken (using two forks) and let it cook for another hour.

I make something very similar to this with Ground Turkey, extra lean, and no beans. I sprinkle some cheese on top and dollop of sour cream and serve it on a bed of lettuce. I eat at least 3 times a week. Good stuff.0

It is pretty high in sodium, so make sure you're drinking plenty of water!0

I love me some Mexican food, and this sounds freakin delicious! I'm going to have to try this sometime soon! Too bad my hubby is super picky.. it'll be all me eating the dish--but that's okay.0
