Ok, yesterday someone mentioned diet pop cake, which I had never heard of. I read back in some of the older posts and tried it last night. It was REALLY good! But, it was kinda in between cake and brownie texture, it that how it's supposed to be, or did I do something wrong?

That's a good description of how it turns out for me, too--not as dense as a brownie, but not as light as a cake. And still a yummy treat!

Ya you got it right! I have also done a can of crushed pineapple with the cake mix, its great with a white cake mix, and frosted with sugar free vanilla pudding and cool whip!!

So what does the diet coke substitute? I have a child that has egg allergies.

it substitutes both the eggs and oil. just a box of cake mix and a can of pop. thats it. i cut the baking time down a few minutes too

Did you bake it until a tooth pick came out clean? I haven't made it for a little while, I don't remember it being that heavy???

I love that cake! It is a great treat, and barely any calories!

It actually has more calories than you'd think (I don't remember the exact amount, but it's in our database). You just need to watch your portion size, like always. Those calories can add up fast!:grumble:

I hope that you use diet pop that's sweetened with Splenda. Aspartame breaks down at high temps.
