Leftover Turkey Casserole

I have posted this in the database. It started out as a pasta dish, but I turned it into a casserole along the way. It is 402 calories per serving and is great to use your leftover turkey. I served with steamed broccolli and there was a lot of flavor.

Ingredients:

1 1/2 c turkey
1 can peas
1 can cream of mushroom soup (I use Fit & Active - Aldi)
1 can mushrooms, pieces and stems
1 jar bertoli garlic alfredo sauce
8 oz spaghetti
1 cup seasoned breadcrumbs
1 - 2 tbsp butter
1 small onion
2 tbsp minced garlic


Directions:

Begin to boil spaghetti and preheat oven to 350 degrees

Sautee chopped onion and minced garlic in non-stick spray or 1 tbsp olive oil. Add turkey, peas, cream of mushroom soup, alfredo sauce, mushrooms and 1/2 can water. Stir and simmer for about 10 min. In a separate bowl, combine melted butter and breadcrumbs.

Drain and add spaghetti to a 9 x 12 baking dish. Pour over turkey misture/sauce and stir together. Top with breadcrumbs and back in oven for 20 - 30 min. or until breadcrumbs are brown.
