Yummy power lunch idea for post-workout...

So I just threw this together and it was SOO delicious! I know it's a little high in caloric value, but that's why I only make it post-workout. It's super satisfying with lots of protein and a great way to get your veggies in.

I put a 1/4 cup dry quinoa in a saucepan with 1/2 cup low sodium chicken broth, brought to a boil and and then lowered to a simmer, covered and cooked for 15 mins. I microwaved some frozen veggies (I like Healthy Weight or Healthy Vision varieties, even if they are a touch higher in sodium) and tossed them on top of the cooked quinoa. Sprinkled with some grated reduced fat parmesan and voila!! It meets all my post workout lunch criteria... fast, packed with protein and delicious!! The best part is you can put your quinoa and broth on and by the time you take a shower, it's ready!! :bigsmile:
