Kale is extremely healthy for you, It contains anti-cancer agents, vitamins, and is tasty.
I've recently started adding Kale into my diet. It's really great. I've been eating it raw or blanched in salad. I've been sauteing it with garlic and lemon juice. Adding it to eggs. I think anytime you use spinach or lettuce you can substitute or add with kale.
One cup of Kale is only 34 calories, so you can eat quite a bit and it won't add many calories.
Here's some basic nutritional info on it from Wikipedia:
*Kale is considered to be a highly nutritious vegetable with powerful antioxidant properties; kale is considered to be anti-inflammatory.
*Kale is very high in beta carotene, vitamin K, vitamin C, lutein, zeaxanthin, and reasonably rich in calcium.
*Kale, as with broccoli and other brassicas, contains sulforaphane (particularly when chopped or minced), a chemical believed to have potent anti-cancer properties. Boiling decreases the level of the cancer compounds; however, steaming, microwaving, or stir frying do not result in significant loss. Along with other brassica vegetables, kale is also a source of indole-3-carbinol, a chemical which boosts DNA repair in cells and appears to block the growth of cancer cells. Kale is also a good source of carotenoids.

Kale "Chips" are my faves! Wash the kale bunches and dry with a paper towel after you tear it apart. Spray lightly with olive oil spray and season however you like them. Bake in the oven at 350 for about 15 minutes until crispy. They almost melt in your mouth!0

I've tried the kale chips, once with oil and vinegar, once with cheese
. Strange but good. The cheese ones taste almost like nachos.

Haven't eaten much kale, but I have been adding collard greens to my diet. I think they have some of the same health benefits.0

I like to make stewed collard, kale and mustard greens with onions and tomatoes....delish!0

I made a great kale dish tonight. Took onion, red pepper, garlic, 1 tbs olive oil and 2 tbs chicken broth and cooked it all together. Even my husband asked what it was and wants me to make it again!!0
