I just came up with a new twist on an old recipe and it's pretty good. Low calorie and low carbs. If anyone would like the recipe just let me know and I'll send it to you.

    Vicky’s Turkey Stuffed Bell Peppers

    1 lb - Honeysuckle White - All Natural Fresh Ground Turkey 93/7
    1 can - Valu Time - Stewed Tomatoes 14.5 oz Can, diced
    1 cup - Riceland - Extra Long Grain Brown Rice - cooked in chicken stock not water
    2/3 cup - Swanson Cooking Stock 33% less sodium - Chicken
    1/2 cup - Kikkoman - Panko Bread Crumbs
    1 Tbsp - Spice World - Minced Garlic
    8 - Walmart - Green Bell Pepper, Whole Pepper
    1 tsp -Morton - Nature's Seasons-Seasoning Blend-No Msg
    1/2 - Diced Red Onion, small, 1/2 cup
    2 - large eggs

    Cook the brown rice per directions on package using the chicken stock instead of water.

    Remove core and seeds from bell peppers, wash and set aside.

    In a large bowl mix all other ingredients together including the cooked brown rice. Using a spoon, stuffed each bell pepper completely leaving no voids inside the peppers.

    Spray 9 x 13 glass pan with olive oil cooking spray. Place stuffed peppers in pan and add just enough water in the bottom of the pan to cover it about 1/4" deep. Cover with aluminum foil and place in oven at 400 degrees for 1 hour.

    Makes 8 serving

    189 Calories, 20 mg Carbs, 6 g Fat, 15 g Protein, 7 g Sugar, 4 g Fiber per serving.

    I had a thought after I sent out my turkey stuffed bell peppers recipe last night and I have made a change. Should make it even better. Instead of using the can of stewed tomatoes, use a can of Rotel tomatoes with green chilies. It makes a difference in the calories, carbs and sugar count. It changes it to 185 Calories, 19 mg Carbs, 6 g Fat, 15 g Protein, 6 g Sugar, 4 g Fiber per serving.
