Vegetarian and dieting

Does anyone have any good easy vegetarian meals. I do eat fish still. I have decided to become vegetarian but also feel I am not getting the right amount of nutrients. I also needed advice on taking vitamns and what I should be taking daily.

    I do a lot of Indian foods - do you like Indian? I take it easy on the spices, but if you like spicy - that's an extra bonus because spicy foods amps up your metabolism! I love paneer dishes. I used to always eat with naan bread, but after finding out how loaded with calories that is, I have started skipping that! Lots of salads on the side with leafy greens, and I don't find a need to take any supplement tablets.

    The company that I work for just came out with a new line of vitamins and the such. All our products are vegan approved also. If you are interested just send me a message. I know we are not suppose to promote companys, but this might answer some of your questions.

    You are what they call a Pescetarian - a meat eater who only eats fish. True vegetarians don't eat any meat - but hey, it's always an option later down the road. Took me a bit to fully convert.

    PS: as a vegetarian, one of the supplements they recommend we take is b12. It's not found in much veggies anymore due to the over rinsing of the food/pesticides, and so really only found in the gut of an animal. You can find some vegetarian options though.

    I was completely vegan for almost a year. I have lots of recipes, but by easy do you mean easy to make or very little time? I found cooking everything from scratch, cutting up veggies a very time consuming process so most of my recipes while easy do take more time than I would like.

    Here is a soup I like, I process it smooth to make it easier to take to work in a thermos.

    1 tablespoon olive oil
    1 cup fresh almond milk (I use unsweetened blue diamond almond milk if I don't have fresh)
    1 leek sliced in 1/3 inch slices
    1 teaspoon fresh ginger (I use more I love ginger)
    1/2 teaspoon real salt (sea salt)
    2 cups vegetable broth

    stir fry leeks and ginger in the soil until softened and slightly brown on the edges. add almond milk, broth and salt. Warm, then puree in food processor or blender.

    You can always play with this recipe and add garlic and roasted red peppers or whatever.

    im not a vegatarian but i do try to cut back on the red meat .
    spinach & zuccinni can be substituted for meat in some recipes.
    works great with anything with tomato sauce. like pizza & lasagna.

    a good multi vitamin is all you need.
    i was taking prenatal vitamins cuz i thought i needed the extra boost.
    but the doc said my folic & B vitamin levels were too hi.
    so stick to the basics.
    if you dont get your protien in other food sources you may need iron. but thats in the multi-vitamin too.
