Spaghetti Squash Recipe & Advice

My husband is training for a 100 endurance run in 2012. As he trains he has slowly been removing things from his diet. We've eaten on the healthy side for about 4 years now (lots of veggies, fruits and lean meats - not so much processed food) so I have my standard meals that we both enjoy. Now that he is restricting his diet, I'm having to find new, creative ways to make meals that taste as good as they are for us. I wanted to share a recipe that has become a staple in our house, as well as see if any of you have some recipes that we may enjoy.

My husband is no longer eating beef, pork, very little chicken and seafood (mostly tofu). He doesn't care for pasta which is why I am super happy I've found spaghetti squash! We only drink rice, almond or soy milk. He does eat eggs but only once a week or so. He eats ALOT of raw veggies and nuts. I can see him progressing towards a vegetarian diet from what it seems and I really need help to continue finding things we both enjoy. He is happy to make his own meals so that I don't end up making two different meals but I'd really like to support what is working for him. Any input you all have is appreciated.

1 Whole Spaghetti Squash
1 onion
3 tablespoons minced garlic
1/2 cup olives (crushed or sliced)
1 chopped red bell pepper
1 chopped green bell pepper
3 tomatoes, cubed
1/4 cup fresh basil chopped
(you can substitute the tomatoes and basil for a can of Italian stewed tomatoes drained if needed)
4 ounces feta cheese

Pre-heat oven to 350 degrees
Slice spaghetti squash in half and clean out seeds and pulp.
Place squash cut side down on a baking sheet and bake for 30 minutes or until the shell is tender.
Remove from oven, flip to cut side facing up, allow to cool enough so that you may handle it
Take a fork and run it long ways inside the squash to create 'noodles' or strings. Put strings of squash in a medium sized bowl.

While the squash is baking, saute onions, peppers, and garlic. Add tomatoes, basil, and olives right before mixing in with squash so that they are warm.

Once the saute mixture is done, toss it with the squash strings and the feta cheese.

I serve mine over garlic/basil polenta but it can be eaten alone as well.
