!Protein-Packed Anytime Meal!
Hi everyone,
Just thought I would post what has become on of my favorite things to eat. It can be easily eaten for breakfast, lunch or dinner. I know it is really really easy...but still thought I would share it anyway
Cheesy Garlic Spinach and Shrimp Omlette/Scramble: 225 Calories!!
Ingredients:
1 cup of Eggbeaters
4oz of boiled shrimp
1 cup of frozen spinach or 2 cups of fresh
1 tsp of crushed garlic
1 wedge of Laughing Cow cheese: The new queso fresco with chipotle flavor is yum!
Cook down the spinach in a frying pan until it has warmed through and wilted.
Cut the shrimp into bite size pieces: generally I cut them in half or into 3 if they are big. I also like to use raw shrimp to start with then blanch them in boiling water until they turn pink and finish the cooking in the pan.
Toss the shrimp and spinach and garlic all together into the pan, until you get a bit of color. Turn down the heat to around a medium flame, and spread out the mixture evenly around the pan.
Pour the eggbeaters over the veggie/shrimp mix.
When you see that its starting to set, I take the wedge of cheese and pinch pieces off of it and place them all over the omlette/scramble.
Sometimes I flip it and it actually becomes an omlette, other times I am not so successful and it falls apart, so its more like a scramble...either it is really delicious.
* Variations: Substitute for any of your favorite meats, I would stick with chicken if you cant eat shrimp. Tomatoes and Onions would also go really well.
