Chicken Pasta Recipe
This tasty chicken pasta recipe is a low calorie pasta, and an ideal weight watchers recipe, as it is made in a tomato sauce base instead of cream. Unlike traditional creamy chicken pasta sauces, this tomato chicken sauce makes a good low fat pasta.

Ingredients
500g diced chicken beast
1 finely diced onion
2 chopped garlic cloves
400g penne
2 cans (410g) diced tomatoes
1 teaspoon dried mixed herbs
2 tablespoons extra virgin olive oil
salt and crushed black pepper to taste
Method
In a large saucepan, bring to boil 3.5 litres of water, and add 2 teaspoons of salt.
Add the penne and cook till al-dente, then drain.
While the pasta is cooking, in a pan, saute the onions and garlic in olive oil, for 5 minutes.
Add chicken to pan and cook until it turns white.
Add tomatoes, herbs, salt and pepper and simmer on medium heat for 20 minutes.
Drain the pasta and serve in a dish, topped with chicken sauce.
Serve immediately with crusty bread.

sounds awesome; however, I would personally ditch the pasta and substitute spaghetti squash! yummo!0

thanks for the spring board. we didn't know what to make for lunch and had some no yolks and tomato sauce and herbs and chicken, it was so good! and low cal. i feel better when i eat better!0
